This recipe is dedicated to the loving memory of Aunt Norma, Norma Knapp. What a wonderful woman, I miss her so much. It was Norma that taught me how to wallpaper many years ago! So, in her memory, I am including one of her recipes, a very favorite of ours, that my family makes often, mostly on special occasions.

NORMA’S COMPANY CAULIFLOWER

1 medium cauliflower
1/2 lb. fresh mushrooms, sliced
1/4 c. green pepper, diced
1/2 c. margarine
1/4 c. flour
1 c. milk
1 tsp. salt
6 large slices mild cheddar cheese
paprika

Separate cauliflower into medium pieces. Cook until tender, 10 min. Drain. In saucepan, brown mushrooms and green pepper in melted margarine. Blend in flour and gradually add milk, stirring until thickened. Add salt. Place into casserole dish half of the cauliflower, cover with half of the cheese slices, then cover with half of the flour, milk, salt, mushroom, green pepper mixture. Repeat layers. Sprinkle with paprika. Bake in 350 degree oven, uncovered, for 15 min. or so, until nicely browned. Makes 6-8 servings.

SOPHIE’S SCALLOPED CORN CASSEROLE

1 can cream corn
1 can whole corn (drain)
1 c. jiffy muffin mix
1 c. sour cream
1 stick butter
1/3 c. shredded Swiss cheese

Melt butter. Mix all ingredients. Bake at 350 for 45-55 min uncovered.
