SOPHIE’S RICE GRIDDLE CAKES
Beat 2 eggs (thoroughly)
Add: 1/2 t. salt
1 c. milk
Mix: 2 t. baking powder and 3/4 c. flour. Add to eggs and milk.
Add: 2 T. melted butter and 1 c. boiled rice.
Mix until smooth. Cook on hot greased griddle or skillet.
